Cranberry Chicken Salad

I had this delicious Chicken Salad at a Session of the School of Women’s Ministries, hosted by my friend, Pamela,  a few years ago.  It is easy to make and so delicious.  You can grill the chicken ahead and easily serve  to your family on a warm (we hope) Spring afternoon.

This healthy and tasty salad may be more appealing to the adults in your family.

This recipe serves 6.


  • 1 1/2 pounds boneless, skinless chicken breast
  • 6 cups mixed salad greens
  • 1 small red onion thinly sliced
  • 1 cup dried sweetened cranberries
  • 3/4 cup feta cheese
  • 1/2 cup pepita (or pine nuts)
  • 1/2 cup olive oil
  • 1/2 cup balsamic vinegar
  • 1/4 cup sugar
  • 1/4 cup orange juice
  • 1/2 tsp. salt
  • 1/2 tsp. fresh cracked black pepper

Sprinkle chicken with seasoned salt.  Grill chicken and then slice into thin strips.

Mix olive oil and vinegar in small bowl. Add sugar, salt and pepper, stirring thoroughly. Gradually add orange juice until well blended with olive oil and vinegar.

Place greens in bowl.  Drizzle with dressing and toss till well coated.

Add onions and cranberries and toss again.

Place chicken (slightly warm) over greens, followed by cheese and nuts.

Feel free to make some substitutions.  If feta isn’t your favorite cheese, experiment with some other options.  Chopped walnuts can replace the pine nuts.  Add finely chopped apple for even more crunch.

Serve with a good french bread spread with boursin and tall glasses of freshly brewed iced tea.
