Grandma Swat’s Crispy Chocolate Sticks

Here they are!  By popular demand.

My mother-in-law made these regularly and our family loved them.  One of our daughters was not a chocolate lover, but the rest of us gobbled these up in short order.

Grandma Swat’s Crispy Chocolate Sticks

350 Degrees

Cookie Layer

  • 1/2 cup butter
  • 2 squares unsweetened chocolate
  • 1 cup sugar
  • 2 eggs beaten till frothy
  • 1/2 cup flour

In double boiler, melt together chocolate and butter.  Let cool slightly. Add sugar, then eggs (make sure chocolate is cool enough to prevent scrambled eggs). Blend in flour and spread into a well greased 9 X 13 pan.

Bake 20 minutes.  They will appear very flat when they are done.  That is normal and is the “crispy” part.

Cool completely before adding next layer.

Filling Layer

  • 4 Tbs. softened butter
  • 2 cups powdered sugar
  • 2 Tbs. heavy cream or evaporated milk
  • 1/2 tsp. good vanilla

Mix together until very light and fluffy.  Spread on cooled cookie layer.  Refrigerate for at least 30 minutes to set.

Glaze

  • 3 Tbs. butter
  • 3 squares unsweetened or German sweet chocolate

Melt together in double boiler.  Cool for 3 or 4 minutes.  If you put the the glaze over the filling while it is still very hot, you may have some mixing of the filling and chocolate glaze layer and lose the shine of the glaze.

Refrigerate until glaze is thoroughly set.  Cut into 1 inch squares or even smaller sticks to make them easier to eat.

If the cookie layer doesn’t seem crispy, you may want to bake a bit longer next time.  But, even if the cookie layer is a little soft, keeping it in the refrigerator will give it a nice consistency and they will still be delicious.

Caution: There is enough sugar and caffeine in these cookies to put the average preschooler into lunar orbit.  But, they certainly are delicious in small amounts and always a treat for adults with a cup of coffee.
