Strawberry Pie

Nothing says summer more than fresh fruit. While it is a little early for locally grown strawberries in our area, we have had some sweet berries bought at our local grocery chain.  And, everyone’s favorite is strawberry pie! I know my grandkids really love this dessert.

In the past, I  have made the strawberry pie that uses strawberry jello to flavor the glaze, but find it a bit artificial.  This recipe uses fresh mashed strawberries to flavor that filling and I can hardly wait to put a big dollop of whipped cream on top of a fresh slice!

Fresh Strawberry Pie

Ingredient

  • One pre-baked pie shell, graham cracker crust or cookie crust
  • 3 pints fresh strawberries, washed, dried, and stems removed, divided use
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/2 cup water
  • 3 drops of red food coloring
  • Sweetened whipped cream

Preparation:

Place one pint of the strawberries in a bowl and mash with a fork. Set aside.
In a 3 quart saucepan, whisk together the sugar and cornstarch.  Stir in water and mashed strawberries. Stir well and begin to cook over low to medium heat till it bubbles (boils).
Cook for two minutes, stirring constantly so that the sugary mixture does not stick or burn. Use a timer.  IF you cook too long, the cornstarch will cause the mixture to become thin and watery.
After two minutes, add a couple of drops of red food coloring and then set aside and allow to cool.

Arrange some beautiful berries in your pie shell. Some people put them stem side down and pointed side up.  Pour the cooled strawberry/sugar mixture over the berries.  Refrigerate for at least four hours.

Serve with generous amounts of sweetened whipped cream.
