Deviled Eggs Recipes – from Kevin

Me and my grandma were trying to think of a good snack for the fourth of July.  We thought maybe deviled eggs would be nice.  I found this picture for my grandma after looking hard for a long time.

The best way to cook hardboiled eggs is in an electric egg cooker, such as the great one Grandma has  from Cuisinart.  But, to boil eggs that peel easily, use these instructions:

Cover 6 eggs with cold water in a large saucepan.  Bring to boil for 5 minutes. Turn off heat.  Cover with lid and allow to set for an additional 15 minutes.  Put pan in sink and run cold water until eggs are nice and cool,(check every 5 to 10 minutes).  Peel very soon.

  • 6 hard-cooked eggs
  • 2 tablespoons mayonnaise
  • 1 teaspoon sugar
  • 1 teaspoon white vinegar
  • 1 teaspoon prepared mustard
  • 1/2 teaspoon salt
  • Paprika

Direction

Slice eggs in half lengthwise; remove yolks and set whites aside. In a small bowl, mash yolks with a fork. Add the mayonnaise, sugar, vinegar, mustard and salt; mix well. Stuff or pipe into egg whites. Sprinkle with paprika. Refrigerate until serving.

    This warms my heart. I can just picture Kevin saying this. It makes me want to make deviled eggs tomorrow. I wish I had a great recipe to send, but we just use Betty Crockers. Thank goodness for Betty.

      We have 13 laying hens so since we had an over abundance of eggs, I just made deviled eggs yesterday for my Bible Study group! I just add a little of this and a little of that so recipe will not be exact. Everybody loved them!
      Mimi’s Deviled Eggs
      12 eggs, hard boiled and peeled (If using farm fresh eggs, they are hard to peel. Just learned a trick that helps, peel in a bowl of water)
      To the yolks add: 1/4 C Mayonnaise (more, if needed) 1-2 T finely chopped Sweet Pickle, 1/8 t dried Mustard, 1/8 t onion powder, 1/4 t Dill Weed, 1/4 t Rice Vinegar, 1/4 t Sea Salt, 1/8 t ground Pepper. Mix all ingredients together. Add extra mayo, if needed, until right consistency, not too mushy! Fill egg white halves and sprinkle with Paprika. As I said these ingredient amounts are approximate because I don’t measure. Add more or less to your taste. Enjoy!
