Today’s Recipe – A Super Bowl of Chili

We have a new recipe!  Sent to us by grandparent friends – G & B –  in Ohio.  They said this recipe was originally called Super Bowl Chili but in their house it has come to be known as A Super Bowl of Chili. Thank you so much to our Ohio friends for this wonderful chili recipe.

A Super Bowl of Chili

1 lb. lean ground beef

1 lb. lean ground pork

2 15 ½-oz. cans hot chili beans or red kidney beans

1 28-oz can tomatoes cut up

2 large onions, chopped

3 cloves garlic, minced

3 Tbsp. chili power

2 Tbsp. crushed red pepper

3 Tbsp. wine vinegar

1 tsp. ground cumin

Shredded cheddar cheese (about 1 cup) optional

Dairy sour cream (optional)

In a 4 quart Dutch oven brown the ground beef and ground pork. Drain off the excess fat. Add the un-drained chili or kidney beans and tomatoes, the chopped onions, green pepper, garlic, chili powder, sugar, red pepper, vinegar, and cumin.

Cover and simmer the chili for 1 hour, stirring frequently to avoid scorching.

To serve, ladle into soup bowls. Spoon shredded cheese and sour cream over each serving. Makes 6 to 8 main-dish servings.
