Artichoke Dip

I remember my first encounter with an artichoke.   My friend, Teri, is an incredible cook.  She served steamed artichokes to my husband and I and showed us how to pull off the leaves and dip them in melted butter. We fell in love with artichokes.

Another friend, Nancy, served this artichoke dip to a group of ladies at our church.  It is delicious.  So, if you are a fan of artichokes, you will surely enjoy this. Nancy has added some notes at the end about ways she has adjusted the original recipe.

I have another salad recipe that includes artichokes that I will pass on another time.


1 cup mayonnaise
1 cup Parmesan cheese
1 cup mozzarella cheese
(1) 14 oz. can artichoke hearts (drained and chopped)
(1) 4 oz. can chopped green chilies
garlic salt to taste
parsley for garnish
2 Tablespoons green onion

put all ingredients into a baking dish (I use a pie plate)
Bake 350 degrees for 20 to 30 minutes

I use 2 jars of artichoke hearts because one just doesn’t seem to be enough, and then I add about 1/4 cup more of mayo and a little more moz. cheese.
