A Really Yummy Chicken Recipe With Only 5 Ingredients

I love curry.  I use sweet madras curry in this recipe.  It is so simple and so tasty. Unlike most crockpot recipes, this one only takes3 –  4 hours.  You don’t want to overcook or the broccoli will be too soft and the chicken dry. Also, if you cook too long the oil will separate from the mayonnaise.

I found this recipe in a Fix-It and Forget-It: Slow Cooker Cookbook (2008)

Chicken Divan


4 boneless, skinless chicken breast halves (I have used bone-in chicken breasts and have just allowed it to cook the full 4 hours)

4 cups broccoli florets or broccoli spears (I think it works better to add the broccoli during the last hour of cooking)

2 – 10 ounce cans of cream of chicken soup

1 cup of mayonnaise

1/2 to 1 tsp. curry powder

Place chicken breasts in bottom or crockpot. Top with broccoli or you can wait till the last hour for tender-crisp broccoli.

Mix together the soup, mayonnaise and curry and pour over chicken.

Cover and cook on high 3 to 4 hours.

This is very good with long grain and wild rice.
