Slow Cooker Hot Gingerbread Lattes

Whenever our kids gather for holidays or family events, everyone wants Dad to make them a special coffee.  This recipe is offered to us by Cheryl Moeller, author of  Creative Slow-Cooker Meals. ( It is one we will try the next time the clan gets together.)

Slow Cooker Hot Gingerbread Lattes

by Cheryl Moeller (Creative Slow-Cooker Meals – Harvest House, 2012)

2 cups strong regular or decaf brewed coffee

1 cup creamer or cream or half-n-half

1 cup coconut milk

2 tsps. ground ginger

2 cinnamon sticks (ground cinnamon gets bitter)

1/2 tsp. ground cloves, 1/2 tsp. ground allspice, 1/2 tsp. ground nutmeg

2 tsps. molasses (optional)

Natural sweetener to taste

Put all ingredients but sweetener in the slow cooker until well combined.

Cook for 3 hours on low or 1 1/2 to 1 hours on high.

You might need to add a little water if it seems a little strong.

Cheryl’s comments: I like to put this in a slow-cooker prior to when I entertain and then it is ready to serve with dessert or as a welcome.

    Interesting. I wouldn’t have thought of making a coffee drink in a slow cooker. But this sounds yummy.
