Granddaughter’s Pie Crust Recipe

Carl and I didn’t agree on much. But in this area, he was totally right. Without the universe there would be no apple pie. I am so glad that the Creator invented the universe and the simple, sweet apple.

My grandmother made wonderful pie crust. But I always struggled rolling it out and couldn’t make a pretty pie at all.

My mother-in-law came from a long line of Dutch and German bakers. When they emigrated to the United States int he late 1800’s they immediately looked for places in downtown Chicago that could house their restaurant and bakeries.

Baking seems to be in our children’s and grandchildren’s blood.

After picking Gala and JonMac apples on Saturday, Nicole decided to make a pie from scratch.  Her crust was phenomenal.  She used an old recipe that I haven’t used in years, but even if it is old, it certainly makes the flakiest pie crust around.  We will give Pioneer Woman credit for this recipe, but you can also find it in a variety of blogs on the internet. http://thepioneerwoman.com/cooking/2007/12/p-p-p-pie_crust_and_its_p-p-p-perfect/

Ingredients

3 Cups flour

1 1/2 cups of Crisco shortening (I prefer to uses it cold

1 whole egg

5 Tablespoons ice cold water

1 Tablespoon white vinegar

1 teapoon salt

Directions

Using a pastry blender, blend the Crisco into the flour.  Do this thoroughly until the flour mixture is the texture of corn meal.

Beat egg slighly. Add water, salt and vinegar to  the egg mixture.  Pour the liquid  into the flour mixture and stir lightly until dough begins to adhere together and form a ball.

Form three balls. Place each on a piece of saran wrap. Flatten slightly.  Wrap tightly. Chill for 4 hours.

When ready, roll it out in a circle larger than your pie plate.  Carefully place into the pie pan. Fill the shell with:

Apple Filling

5 cups medium sliced Jon Mac or SpruMac apples.

Stir together: 1 cup sugar. You can substitute brown sugar for a portion of the sugar if you like; 2 Tablespoons flour; 1 1/2 tsp of cinnamon. After the apple mixture is stirred together, drizzle 2 to 3 tablespoons of melted butter and mix in.

Top with either: second crust, lattice, crumb topping

Pour into pie crust.  Bake in 374 hour oven for almost an hour.
